A one-pot meal using prepared vegetables. Serve Mediterranean vegetable stew with pasta or jacket potatoes if your crew are likely to be extra hungry.

SERVES 4 – PREP 5 MINS – COOK 20 mins

200g sliced red onions

500g chunkily cut Mediterranean vegetables (fresh or frozen)

350g cherry tomato and basil sauce (we like Sacla)

400g can butter beans

handful of fresh basil leaves, if you like

1 Put the onions into a non-stick pan with 1tbsp water or olive oil if you prefer. Cook gently for 5 mins to soften.

2 Add the vegetables and fry for 10 mins to soften.

3 Pour in the tomato and basil sauce and butter beans and warm through for 5 mins. Serve sprinkled with fresh basil  leaves and some crusty bread.

Per serving: 150cals, 5g fat, (0.5g sat fat), 17g carbs
