Liven up your lamb with a sprinkling of cumin to add a distinctive difference. It’s so simple!

SERVES 4  – PREP 5 MINS – COOK 15 MINS

1tbsp olive oil

2 red onions, sliced

500g diced leg of lamb

2tsp cumin

4 tomatoes, chopped

2tbsp parsley or mint, chopped

200g packet feta, crumbled

8 flour tortillas

 

 

 

1 Heat the oil in a large pan, add the onions, the seasoned lamb and cumin and brown for 10 mins.  Add 150ml water and simmer for 7 mins.

2 Meanwhile, combine the tomatoes, herbs and feta.

3 Microwave the tortillas, as per pack. Divide the lamb and tomato salad between them and roll up.

Nutritional info: 690 cals, 24g fat (12g saturated) 74g carbs

Top tip:  Add a splash of balsamic vinegar to the tomato salad.
