A little goes a long way with this strong-flavoured fish and Jamaican-style vegetables.

SERVES 6 – PREP 10 mins – COOK  10 mins

1tbsp olive oil

2 small red onions

1 red and green pepper, deseeded thinly sliced

2tbsp white wine vinegar

4 smoked mackerel fillets

Juice of 1 lemon

Lemon wedges and parsley (optional)

 

 

 

 

1 Heat the oil in large pan, add the onions and cook gently for 5 mins, to soften.

2 Add the peppers and cook for 2 mins. Pour in the vinegar.

3 Add the mackerel to the pan,  pour over the lemon juice and warm through for a few mins, if you like. Or serve the mackerel cold if you prefer.

4 Serve with boiled rice, finishing with lemon wedges and parsley, if you like.
