Our shortcut for busy cooks is to use a pot of tomato salsa to coat the pasta. Then treat yourselves to the sun-blush tomatoes from the deli, pricey but so worth it!

SERVES 6 – PREP 2 mins – COOK 10 mins

200g fusilli pasta

200g tomato salsa

2tbsp olive oil

1tbsp balsamic vinegar

8 sunblush tomatoes, drained from oil

290g pack mini mozzarella balls, drained

12 basil leaves, torn

1 Boil the pasta in a large pan of boiling salted water for 10 mins.

2 Meanwhile, put the tomato salsa into a large bowl. Add the olive oil, balsamic vinegar and sunblush tomatoes.

3 Drain the pasta, tip into the bowl with the other ingredients. Add the mozzarella and basil leaves and season generously.  Serve warm or cold.

Per serving:307 cals, 15.5g fat, (7.5g saturated), 30g carbs
