A great solution for busy cooks! Combine your potatoes and vegetables together in one large substantial side dish – so you’ll save on washing up too!  You’ll just need one large bowl….

SERVES 8 PREP 10 MINS

1.5kg charlotte potatoes, halved

200g French beans, halved

250g frozen petis pois

4 beef tomatoes, chopped

1 small bunch chives, chopped

zest and juice 2 lemons

5tbsp extra virgin olive oil

1 Put the potatoes into a pan with boiling salted water, return to the boil and simmer for 15 mins until tender.

2 Put the beans into a bowl with 3tbsp water, cover and microwave for 5 mins. Rinse with cold water (this will help them to keep their colour)

3 Add peas to potatoes and cook for 3 mins, then drain and put into a large bowl.

4 Stir in the tomatoes and chives. Season generously with salt and ground black pepper.

5 Put the lemon juice and olive oil into a jar. Seal and shake to mix, then toss into potatoes.  Serve whilst warm.

Per serving: 242 cals, 8g fat (1.5g saturated), 35g carbs

Smart idea

If you want to get ahead combine beans, peas, tomatoes, chives and dressing in a large bowl.  Cook potatoes at the last minute, toss together and serve warm.
