A brilliant protein rich nutritious wholesome meal.

SERVES 4 – PREP 10 MINS – COOK 10 MINS

1 tbsp olive oil

400 g mini chicken brest fillets

1 garlic clove, crushed

125g giant couscous

2 ripe avocados

2 baby romaine lettuces, torn into bite-size pieces

100g prepared pomegranate

4 tbsp light Italian dressing

 

 

 

1. Heat the oil in a pan, add the chicken and season.  Stir in garlic and cook for 10 mins until golden.

2. Boil couscous until just tender. Drain and stir into the chicken.

3. Peel avocados and quarter. Divide chicken and couscous, avocados, pomegranate and lettuce between 4 large bowls.

4. Drizzle over dressing and mix lightly. Serve hot or cold.

Per Serving: 427 cals, 26g fat (5g saturated), 19g carbs
