2tbsp olive oil

300g can Jersey potoatoes, drained, sliced

200g jar roasted peppers, sliced

100g salami slices

100g grated cheddar cheese

6 large eggs, beaten

50g wild rocket

 

1 Heat oil in a large  non-stick frying pan, add potatoes and fry for 5 mins to crisp up a little.

2 Heat up the grill.

3 Add the peppers, salami and cheese to the pan.

4 Pour over the eggs, season generously. Cook for a few mins, until the base sets.

5 Pop the pan under the grill and cook for a few mins just until the egg firms up. Serve scattered with rocket.
