Fabulous to serve as a starter or light lunch.

SERVES 4 – PREP 10 MINS – NO COOK

2tbsp olive oil

Juice 1 lemon

1/4 tsp chilli flakes, if you like

200g feta cheese, cut into small cubes

80g babyleaf herb salad

1 canteloupe or charentais ripe melon

6 slices (85g) Parma ham

 

 

1 Pour the olive oil, lemon juice and chilli flakes into a screw-top jar, season and shake to mix.

2 Arrange the cheese, salad and melon onto 4 plates.

3 Crumple a couple of slices of parma ham, over each serving. Drizzle over the dressing, to serve.
