This Slimming World beef stew is a great winter warmer that will fill you up quickly without the guilt! The red peppers and onions give a real depth of flavour to this slowly cooked beef dish – we guarantee it’ll become a firm winter favourite.

Serves 4

Ready in about 3 hours

Ingredients:

  • 800g lean beef stewing beef, all visible fat removed, cut into bite-sized pieces
  • 3 garlic cloves, peeled and crushed
  • 2cm piece of root ginger, peeled and grated
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp medium curry powder
  • 4 red peppers, deseeded and cut into large bite-sized pieces
  • 2 large onions, peeled and cut into large wedges
  • 400g passata
  • 800ml beef stock
  • 1 cinnamon stick
  • 2 cloves
  • 3 cardamom pods, lightly crushed
  • salt and freshly ground black pepper
  • 6 tbsp finely chopped coriander

Method:

  1. Place the beef in a heavy-based saucepan along with the garlic, ginger, cumin, coriander, curry powder, peppers and onions.
  2. Stir in the passata and stock and add the cinnamon stick, cloves and cardamom pods. Season well and bring the mixture to the boil over a high heat.
  3. Cover tightly, reduce the heat to low and cook (using a heat diffuser if you have one) for 2-2 ½ hours or until the beef is tender.
  4. Remove the cinnamon stick, stir in the coriander and serve immediately
