To make this a more substantial meal add some mini mozzarella balls.
SERVES 4 – PREP 10 MINS – COOK 5 MINS
250g day old country bread, broken into chunks
1 garlic clove, crushed
8tbsp extra virgin olive oil
1tbsp red wine vinegar
pinch caster sugar
450g cherry tomatoes, halved
560g jar roasted red peppers, drained and sliced
150g kalamata olives
1 bunch basil leaves
1 Heat the oven to 200C or Gas 6. Put the bread in a roasting tin and heat for 5 mins with the garlic.
2 Pour the olive oil, vinegar and sugar into a large bowl and whisk together.
3 Tip in the bread with the tomatoes, red peppers, olives and basil, toss together and season generously.
