Feeling fed up? Baking indulgent sponge puddings is the perfect way to cheer yourselves up – a hug in a mug! Individual sponge puds are so cute! Use regular teacups to bake and serve.
SERVES 4 – PREP 15 MINS – COOK 35 MINS
125g golden caster sugar
125g self-raising flour, sifted
8tbsp lemon curd or jam
1 Heat the oven to 200C, Gas 6. Grease 4 x 150ml heatproof cups or moulds, and base-line. Cream together the butter and sugar until pale and fluffy.
2 Add the eggs and continue whisking until smooth. Fold in the flour and milk until evenly mixed.
3 Put 2tbsp of lemon curd or jam into the base of each cup or mould. Spoon on the sponge mixture.
4 Put the cups onto a tray and bake for 35 mins until risen, firm and a cocktail inserted into the centre and comes out clean. Cook for 5 more minutes, if needed.
5 Upturn the puddings onto serving plates, remove, paper and serve with custard or crème fraiche.
