Real chocolate melted together with butter makes sure that these have a gorgeous gooey centre.
MAKES 20 – PREP 15 MINS – COOK 25 MINS
325g caster sugar
125g self raising flour
1tbsp icing sugar
1 Put the chocolate and butter into a heatproof bowl over a pan of simmering water for a few mins to melt. Heat the oven to 190C, Gas 5. Grease and line 20cm square tin.
2 Whisk together the sugar and eggs until pale and frothy.
3 Fold in the melted chocolate mixture, flour and cocoa.
4 Pour into the prepared tin and bake for 20-25 mins until risen and just firm. Cool and cut into 20 squares. Dust with icing sugar, if you like.
