Chilli-prawns-with-tomato-sOur top tip for this recipe is to choose frozen prawns – they’ll be cheaper than those sold chilled on the fish counter. Low fat, high protein and super-quick to cook!

350g jumbo king prawns

1 red chilli, deseeded, chopped

2 garlic cloves, crushed

Several thyme sprigs

2tbsp olive oil

Juice of 1 lemon

200g tomato salsa

 

1. Heat a barbecue or oven to 200C, Gas 7. Put the prawns in a large roasting tin.

2. Scatter over the chilli, garlic and thyme, season, drizzle with olive oil and squeeze on the lemon juice.

3. Barbecue for 5 mins, turning as needed or cook in the oven for 10 mins until just cooked through. Serve with the tomato salsa.
