3 red peppers, quartered and deseeded

250g halloumi cheese, cut into 12

6 basil leaves

6tbsp olive oil

 

1. Thread the peppers, cheese and basil leaves onto skewers. Drizzle with the oil and season with salt and pepper.

2. Heat a griddle and cook the skewers, pepper side down, for 2 mins. Turn and cook them cheese side down for 1 min.

3. Flip over again and cook pepper side down for 1 min.
